“蛋白”是egg white,那“蛋黄”用英语怎么说?
鸡蛋是我们日常生活中最常见的食材之一,有些人可能爱吃蛋白,有些人可能更爱吃蛋黄。你知道它们用英语怎么说吗?
首先我们来认识一下鸡蛋的各个部分
eggshell 蛋壳
eggshell (noun):
the thin, hard, outer layer of an egg.
薄而硬的鸡蛋外层
例:
I peeled the eggshell from the hard-boiled egg.
我把煮熟的鸡蛋剥了壳。
yolk /jəʊk/ 蛋黄
yolk (noun):
the round yellow part in the middle of an egg.
鸡蛋中间圆形的黄色部分
例:
I like my eggs lightly cooked so that the yolk is still runny.
我喜欢不把鸡蛋熟透,这样蛋黄就还是稀的。
(Notice how the L is silent in the word yolk 注意在单词“yolk”中L是不发音的)
Egg white 蛋白
egg white (noun):
the clear liquid of an egg. When it is cooked, it turns white.
鸡蛋的透明液体部分。煮熟后变成白色。
例:
Meringue is a sweet ingredient made from whipped egg white and sugar.
蛋白霜是一种由搅打过的蛋白和糖制成的甜味配料。

Hard-boiled 煮鸡蛋(老的)
hard-boiled (adjective):
to boil an egg until the egg white and the yolk become solid.
煮一个鸡蛋,直到蛋清和蛋黄变成固体
例:
I made some hard-boiled eggs for our picnic.
我为我们的野餐做了一些煮鸡蛋。
Scrambled eggs 炒鸡蛋
scrambled egg(s) (noun):
a dish prepared by mixing the white and yellow parts of an egg together while heating them.
把鸡蛋的白色和黄色部分混合在一起加热而成的菜
如果想要炒的较软一些就是soft scrambled eggs,熟透的就是hard scrambled eggs
例:
I usually have scrambled eggs and bacon for breakfast on Sundays.
星期天我早餐通常吃炒蛋和熏肉。
煎蛋
煎蛋的英文其实才是“Fried egg”,在煎蛋时也会出现与水煮蛋类似的问题,那就是我们对于蛋的熟制程度的要求。
在美国,煎蛋通常有三种熟制程度:半熟(over medium),全熟(over hard),以及太阳蛋(sunny-side-up)。
其中半熟和全熟的蛋都会是双面煎,其区别在于蛋黄(yolk)是否完全成熟。如果是溏心的煎蛋就被称为“over medium”,而蛋黄全熟的煎蛋就是“over hard”啦。
什么是太阳蛋?
An egg cooked “sunny-side-up” means that it is fried just on one side and never flipped. The yolk is still completely liquid and the whites on the surface are barely set.
太阳蛋是指鸡蛋不翻面只煎一边。蛋黄(yolk)还是完全液态的,表面的蛋白(egg white)几乎没有凝固。
英文中,关于“fried”一般有两种:shallow-fried(浅炸) 和 deep-fried(深炸),对应到中文里,就是我们所说的“煎”和“炸”;跟英文不同的是,中文里,如果我们说“炸”,对应的就是“油炸”,但在英文中,如果说到“fried”,一般指的是“shallow-fried”,也就是“煎”。
煎蛋卷/煎蛋饼
很多朋友也非常喜欢吃蛋饼,英文中叫做Omelet.
In cuisine, an omelet is a dish made from beaten eggs fried with butter or oil in a frying pan (without stirring as in scrambled egg). It is quite common for the omelet to be folded around fillings such as cheese, chives, vegetables, mushrooms, meat (often ham or bacon), or some combination of the above.
在烹饪中,煎蛋卷是把打散的鸡蛋在煎锅里用黄油或油煎制而成的(不像炒蛋那样搅拌)。煎蛋卷通常是将奶酪、韭菜、蔬菜、蘑菇、肉类(通常是火腿或培根)等馅料包裹在内折叠起来,又或者是上述几种馅料的组合。
煎蛋卷制成之后的形状会类似于一个半月形(half-moon shape)。而大家在点煎蛋卷的时候也会有不同的选择。比如包含很多肉类和蔬菜的农场主煎蛋卷(farmer's omelet),又或者是仅仅有奶酪的奶酪煎蛋卷(cheese omelet),另外对于饮食健康十分看重的人也有蔬菜煎蛋卷(vegetable omelet or vegan omelet)作为选择。
据说煎蛋卷是中国人发明的,途径印度传入中东和欧洲。最后跟随移民才到了美国。
