制作步骤 | Instructions
1️⃣ 处理虾仁 | Prepare the shrimp
虾去壳,留尾部,开去虾线。
Peel shrimp, keep tails, devein and butterfly.
2️⃣ 腌制虾仁 | Marinate the shrimp
将虾仁放入盆中,加入白胡椒、盐、料酒,用手抓匀。再加玉米淀粉拌匀,腌制15分钟。
Mix shrimp with white pepper, salt, and wine. Massage, then coat with cornstarch. Marinate for 15 minutes.
3️⃣ 准备酱汁 | Make the sauce
用番茄酱、盐、白胡椒混合,再加葱姜水和玉米淀粉,搅拌均匀。比例:番茄酱 70%。
Mix ketchup, salt, white pepper, spring onion-ginger water, and cornstarch. Keep the ratio: ketchup 70%.
4️⃣ 煎虾仁 | Pan-fry the shrimp
热锅加少量油,油热后放虾仁,中大火煎至两面金黄即可。
Heat a pan with a little oil. Fry shrimp on medium-high heat until golden on both sides.
5️⃣ 加入菠萝和酱汁 | Add pineapple and sauce
加入菠萝块翻炒至微焦,倒入酱汁,小火煮2分钟,让酱汁均匀裹在虾仁上。
Add pineapple, stir-fry lightly, pour sauce, simmer 2 minutes.
6️⃣ 装盘装饰 | Plate and garnish
装盘后撒上白胡椒和香菜叶即可。
Garnish with pepper and cilantro.
